General Xi’s Chicken

Two summers ago, my friend Jaime had a cookout at her house where everyone brought a dish to the party. I made a citrus grilled chicken dish that everyone liked. I gave Jaime the recipe and she later served it to her relatives, who also liked it. When they asked Jaime the name of dish, she told everyone it’s from Yue Xi. Since then, in Jaime’s household its been known as “General Xi’s Chicken.”
I am very proud to present this recipe named after me. The key is good split chicken breast with bone. The ingredients are simple: 4 chicken breasts, ½ cup orange juice, ½ cup lime juice and blackening seasoning.
Marinate the chicken breast in the orange and lime juice plus a dash of salt for 2 hours in the refrigerator. Prepare the grill. Rub the blackening spice all over the chicken. Then grill the chicken until it is brown and firm to the touch, about 7 minutes per side. It’s that simple.
