Favorite brownies

I love chocolate brownies, and my favorites are the ones that are bittersweet, with dense fudge like texture and nutless. When I make mines, the two most important ingredients are good quality unsweetened chocolate which contains 99% cacao, and pastry flour. I also do not add any baking powder and salt as most brownie recipes suggest, because the results will be cakey for my taste. Here is the list of ingredients in my brownies: 3 oz unsweetened chocolate, 1 stick of unsalted butter, 2 large eggs (room temperature), 1 Tbsp vanilla extract, 1 cup of sugar, 3/4 cup pastry flour sifted. The instruction is very simple, melt the chocolate with butter in a double boiler and mix until smooth mixture. Remove the double boiler from the heat, add sugar, vanilla, eggs then flour. Pour the mixture in a 8 inch square glass pan, and bake at 350F for 30 minutes.
